During my pregnancy, I definitely craved ice cream regularly. In particular, I craved Mint Chocolate Chip Icecream so we pretty much always had a tub on hand – that is until I began making these delicious 4 Ingredient Mint Chocolate Chip Popsicles.
I’ve always been someone who’s tried to find ways to home-make my favourite dishes and treats. I like being able to make healthier versions of my favourite things so that I can enjoy them more often and feel good about having them more regularly.

These 4 Ingredient Mint Chocolate Chip Popsicles are a great healthier version of my favourite sweet-treat indulgence: mint chocolate chip ice cream. Making them is super easy since these are ingredients we always have on hand, and because they don’t require any baking, they are also super quick to make as well.

How Many Popsicles Does This Recipe Make?
This recipe makes 4 popsicles using this popsicle mold. For all four molds, you need 240ml of liquid so keep that in mind if you’re using larger popsicle molds – you may need to increase the amount of liquid used in your recipe.
How Long Does This Recipe Take?
Mixing up this recipe takes only about 5 minutes. There’s no baking involved or anything overly complicated. The banana, coconut milk, and peppermint extract are simply blended together and then poured into the molds, then the chocolate chips are added as the finishing touch before freezing.
Freezing your popsicles is the time-consuming part. I find that it takes about 3 hours to freeze these popsicles, though usually I just let them set fully overnight.


Is This Considered “Nice-cream”?
No, this is not considered a “nice-cream” because the chocolate chips are not vegan. If you would like this recipe to be vegan then purchase vegan-friendly chocolate chips! Aside from the chocolate chips, this recipe is vegan-friendly.


I Don’t Have These Molds, Can I Still Make This Recipe?
Of course. Depending on the size of your molds though you’ll need to adjust your ingredient amounts. For reference, these 4 molds together hold a combined 240ml of liquid. They are quite small popsicle molds so you may need to increase your ingredient amounts if you are using larger molds.
While you may want to figure out the exact measurements, this recipe is a really good one to just “wing”. Just taste as you go to make sure you like the flavour.

Not A Fan Of Mint? Change It Up!
I’m a huge mint lover and always have been. When it comes to desserts and treats, I pretty much always choose the mint option, if there is one. I know though that not everyone loves mint quite as much as I do so if you’re reading this recipe and thinking you’d like to change the flavouring: absolutely do!
I use Peppermint Extract in this recipe, but you can use any extract you prefer. Vanilla Extract and Lemon Extract are two other flavours that are big favourites in our household.

Ingredients
- 1/2 – 1 Banana (Depending on size. Use whole banana if small)
- 1/2 Cup of Canned Coconut Milk
- 1 Tsp of Peppermint Extract
- Chocolate Chips
Instructions
- Break up 1/2 – 1 banana and add it into your blender.
- Pour your 1/2 cup of Canned Coconut Milk into your blender. If you find that there is little liquid content in your canned coconut milk then add a small splash of water. This will help blend your mixture together to be creamy and smooth.
- Lastly, add 1 Tsp of Peppermint Extract.
- Blend ingredients together until smooth.
- Pour your mixture into your popsicle molds and then add a few chocolate chips to each popsicle before putting the popsicle handles in place.
- Put your popsicles in the freezer for 3+ hours (until frozen).
