I’ve always enjoyed making breakfast on the weekends. You get to sleep in, wake up, and make breakfast when you get up and are ready. It’s a little more lazy, a little more fun, and you get to do things in your own time.

The weekdays, however, are a different story. They typically are a lot more groggy and a lot more rushed.
Breakfast usually isn’t something that involves a lot of fun or creativity, instead, it’s whatever can be made quickly as possible so we can get to work.


This winter though, I’ve been a bit more proactive with our breakfasts. Rather than just settling for some quick toast on the go, I’ve prepped breakfast (like today’s Easy Slow Cooker Banana Coconut Oatmeal Recipe!) for the week on Sundays.

I know I’ve mentioned it before, but I have to say it again: I LOVE how meal-prep days really make the whole week ahead so much easier, healthier, and more delicious.


I don’t know about you, but during the cooler winter months, there’s nothing I want more in the mornings than something warm and cozy for breakfast. And, when I think of cozy yummy breakfasts, I think of oatmeal recipes.



Oatmeal is such a great go-to during the winter months. It’s delicious, and it’s super easy to prep a huge batch of it for the week ahead.
This winter, I’ve made countless batches of overnight slow cooker oatmeal – but none have I LOVED quite as much as this Easy Slow Cooker Banana Coconut Oatmeal Recipe,



So many of my favourite desserts are made with either coconut, banana, or both.
So a few weeks back, when I was putting together our weekly slow cooker oatmeal batch, it just clicked: why not combine a few of my favourite dessert flavours to make a delicious and healthy breakfast?


I don’t know about you, but dessert for breakfast sounds pretty dang good to me – especially when it’s easy, nutritious, and great fuel for the day ahead.

This delicious slow-cooker oatmeal was an instant favourite in our house, and since then it’s been our go-to.
You can also easily change/spruce up this healthy oatmeal every day with different toppings like banana slices, nuts, and berries.


Overnight Slow Cooker Oatmeal

Easy Slow Cooker Banana Coconut Oatmeal Recipe. This delicious slow cooker recipe is a delicious breakfast that you can prep on the weekend for the week ahead!
Ingredients
- 2 Cups Steel Cut Oats
- 1 Cup Milk
- 3.5 Cup of Water
- 1.5 Tsp of Stevia
- 1 Tbsp Cinnamon
- 1 Tbsp Vanilla
- 2 Bananas (sliced)
Instructions
- Begin by cutting up your banana. You'll want to slice them.
- Add your oats, milk, water, stevia, cinnamon, vanilla, and bananas all into your crockpot
- Stir all the ingredients together so that they are fully mixed.
- Turn your crockpot to low and cook for 6-7 hours (check occasionally) OR, for a faster cook time, turn to high for 3-4 hours.
- Once your oatmeal is done, add toppings and enjoy! (And, use containers to store the rest for the week ahead)
Notes
Try adding in raisins to mix up this recipe.
