
St. Patrick’s Day is just a few short days away and you know what that means: it’s time to get green. Break out your green clothes, grab a green beer, and whip up some green eats, like this deliciously green matcha muffins recipe.



Some years, St. Patrick’s Day is a lively occasion for us. This year, however, will be a much calmer celebration in our household.
Rather than go out, we’re staying in and just going to be spending the day working on house projects and our garden.



This year, I’ve really become quite the matcha fan. I often enjoy a matcha breakfast bowl, complete with fresh strawberries and prana proactive chia seeds. Also, I newly obsessed with Matcha Collagen Lattes – I truly cannot get enough of it.



Matcha has a ton of health benefits. It contains L-theanine which helps calm anxiety, boost energy, support your metabolism, and improve your sleep.
L-Theanine is found in many different teas, but matcha actually is said to contain as much as 5 times more L-Theanine than other teas.



Matcha is also rich in chlorophyll.
Chlorophyll is another magical component of matcha. It’s said that chlorophyll can actually help detoxify the body, help control hunger, support your immune system, and fight the signs of aging.
In the last year, I’ve seen so much about adding chlorophyll into your diet for these health benefits. I didn’t realize until just recently that matcha is jam-packed with it and other incredible vitamins, minerals, and superfoods.



Since I have hypothyroidism (I’ve had it since I was 15) I often feel really tired and experience brain fog and I’ve been so impressed with how matcha really helps with that. I’m not saying it’s the be-all-cure-all but it does help boost energy and I’ve really enjoyed that.



Aside from these matcha muffins being absolutely delicious…
What I love so much about this matcha muffin recipe is how quick and easy it is to make. These muffins really only take me about 30 minutes to whip up.
I know I talk a lot about time-saving recipes, but this one really is just such a time-saver.



Oh, and one more thing I love…
I really just LOVE that these green matcha muffins don’t require any ingredients that I don’t already always have in my pantry. It makes them super convenient to make and a great go-to recipe.



Matcha Muffins
The BEST matcha muffin recipe - soft, moist, fluffy, and totally delicious! Plus, they are super quick and easy to make.
Ingredients
- 2 3/4 self rising flour
- 3/4 cup sugar
- 3/4 milk (or milk substitute)
- 1/4 vegetable oil
- 2 eggs
- 1 tbsp matcha
- 1 tsp vanilla
- Optional: Chocolate chips
Instructions
- Preheat oven to 400 F.
- Prepare your muffin tray by greasing the cups. I use PAM to quickly grease the muffin tin.
- Combine all ingredients together in a bowl and mix them until the flour is completely integrated into the liquid ingredients. **The flour will still appear lumpy. If you want it to be smoother then use a mixer and add in a small splash more of oil
- Pour mixture into muffin cups (nearly full)
- Bake for about 20 - 25 minutes
