The weekdays are too busy and too chaotic to always be creative, so I love having a few easy and delicious recipes on hand (like today’s peanut butter granola bars!) to make throughout the week.

I used to just buy granola bars, but when I realized how easy they were to make at home – I decided to simply make my own each week. This PB granola bars recipe makes about 8 granola bars so you’ll have plenty so enjoy.

Growing up, my favourite granola bars, desserts, snacks, or treats, always had Peanut Butter in them. It’s one of my favourite ingredients and flavours. I can remember as a kid that opening up my lunch kit and seeing a PB granola bar and feeling like I hit the jackpot: today’s lunch was going to be awesome!

So, nowadays, when I made granola bars, I typically always make these peanut butter bars. To me, these PB granola bars are still the ultimate yummy snacktime treat.

What I really love about these though is how easy they are to make.
While I consider cooking and baking quite fun, sometimes it can be a hassle.
Some weeks are just busier and more intense than others and cooking it the last thing I want to do. It’s recipes like this that really help me feel prepared during the weekdays.

I truly believe that during the weekdays, it’s important to have things prepared so that no matter what happens Monday through Friday, you have something healthy and hearty to grab and enjoy.
